R.E.V.O.O is made exclusively from early harvested Cypriot Koroneiki olives. To help preserve the olive nutrients and support absorption in the body, this high-grade organic extra virgin olive oil contains a high concentration of bioactive antioxidants from polyphenols, up to 30 times more than standard extra virgin olive oils. It also contains a broad spectrum of other bioactive compounds, including maslinic acid, squalene, and vitamin E.
The Koroneiki olives are grown on wild, naturally resilient trees. These trees are not irrigated or artificially fertilized. Instead, they rely on their own natural protective systems to thrive. As a result, the olives develop high levels of polyphenols and other natural plant defense compounds that help protect the trees and their fruit against insects and environmental stress. These naturally occurring compounds, which support the health of the tree, are also valued for their potential benefits to human health4.
The making of R.E.V.O.O
R.E.V.O.O is only made from olives grown without fertilizers. Before pressing, the olives are carefully selected and cleaned. The remaining byproducts are saved for biofuel and can also be used as organic compost to help replenish the soil.
The patented pressing technique is designed to preserve the olive’s full potential by retaining bioactive compounds that are often lost or reduced in standard olive oil production. Before cold pressing, the harvested olives are processed in an enclosed, continuous system in which leaves and twigs are removed. The olives are then thoroughly washed to remove surface contaminants.
The extraction process is gentle, low-impact, and eco-friendly. It is based on shearing rather than crushing the olives, which helps maintain their original nutritional characteristics. In many standard extra virgin olive oil production methods, process aids such as water and oxygen are introduced, which can reduce nutrient content and shorten shelf life. In the R.E.V.O.O process, no water is added to adjust consistency. Instead, natural forces and advanced sensing technology are used to gently squeeze both the olive stone and the flesh while helping preserve the enzymes inside the stone and protect the oil from degradation.
In standard centrifugation processes, water may become mixed with the oil and must later be removed before bottling. R.E.V.O.O is ready to be bottled within 48 hours. The result is a premium, aromatic olive oil with low acidity and peroxide values that remain low for an extended period.
A pillar of the Mediterranean diet
The Mediterranean diet is widely regarded as one of the healthiest dietary patterns. One of its key components is olive oil rich in omega-9 and polyphenols. The diet is also characterized by a high intake of vegetables, fruits, legumes, nuts, beans, cereals, grains, and fish.
Health authorities worldwide recommend reducing the intake of saturated fatty acids, which are typically found in processed and ultra-processed foods, and increasing the intake of unsaturated fatty acids, which are found in foods such as olive oil[2]. Replacing saturated fats with unsaturated fats in the diet has been shown to help reduce and maintain normal blood cholesterol levels2, 3.
The main fatty acid in R.E.V.O.O is oleic acid (omega-9), which is recognized for its role in helping maintain normal blood cholesterol levels3.
